Crispy Rice Spicy Salmon Bites
Looking for a way to use your day-old rice? We’ve got ya covered. Our Crispy Rice Spicy Salmon Bites is a super quick and easy dish to satisfy all you sushi lovers!
What You’ll Need:
For The Rice:
2 cups cooked short grain sushi rice (if it’s a day old, even better)
1 tbsp rice vinegar
1 tsp sugar
1 tsp sesame oil
salt to taste
neutral oil for frying
For The Spicy Salmon Mixture:
6 oz sushi grade salmon
1 tbsp Boon Sauce
1 tbsp Kewpie mayo
1 tbsp sesame oil
1 tbsp soy sauce
1 tbsp of chopped chives
1 tbsp sesame seeds
Start with your day-old rice—if you don’t have any, fresh steamed rice will work—and combine it with the rice vinegar, sugar, sesame oil and some salt. Mix together. Line a square container with some plastic wrap and pack the rice down. Make sure to get the corners too to get a nice square shape!
Place the rice in the freezer for at least 30 minutes. Mince up your sashimi grade salmon and add sesame oil, soy sauce, Kewpie mayo and Boon Sauce! Feel free to make this part your own and add more of less of each to taste. Add in chopped chives, sesame seeds and give it a mix.
Take out your rice and cut it in into small squares. Add some neutral oil to a pan and fry those rice cubes up! Using tongs, flip them over as they start to brown. Once its a golden brown, plate it and add your salmon mix on top. Add more chives and a sliced jalapeño on top to garnish (and of course more Boon). Enjoy!
