White Bean Kale Salad with Boon Dressing
This white bean kale salad is the perfect fall dish! We make our version with a Boon vinaigrette dressing and it’s simply delicious.
What You’ll Need:
For the salad:
2 bushels of kale
A pinch of sea salt
1/3 cup sunflower seeds
2 tbsp toasted pepitas (pumpkin seeds)
1/2 avocado
1/2 15oz can of white beans, drained and rinsed
For the dressing:
1 tbsp Boon Sauce
1 tsp lemon juice
2 tbsp olive oil
1 tbsp dijon mustard
1 teaspoon maple syrup
2 cloves of garlic, minced
Black pepper to your heart’s desire, feel free to adjust to taste!
First, start by rinsing your kale and patting it dry. Tear small pieces off the stem and add to a mixing bowl, along with your salt. Massage the kale until it’s soft enough for you to want to bite into it and set aside. In another small bowl (or your empty Boon bottle), whisk all the dressing ingredients together.
Add the white beans, avocado, pepitas, and sunflower seeds on top of your kale. Toss in your dressing and mix everything together. Serve immediately and enjoy!
